Succulent Oregano Chicken

Thinking of what to eat tonight but don’t want to put too much time and effort into cooking, yet want something juicy and succulent? I might have the solution for you!

Funny fact about oregano: Oregano oil may be a natural solution to protecting chickens from germs without antibiotics. Really? How fantastic if this fact applied to humans as well although we’d be walking around smelling like pizzas…

The marination of the chicken breasts in this recipe is the most time consuming, we’re talking 20-30 minutes but it’s SO simple after that and so, so delicious. I like to serve this dish with an effortless balsamic vinegar based salad, usually a rocket-cherry tomato and red onion one.

Succulent Oregano Chicken – serves 3

  • 3 chicken breasts
  • Oregano
  • Pepper & salt
  • Extra virgin olive oil
  • Garlic powder
  • Cheddar Shreads
  • Cayenne Pepper -optional

Step 1

In a bowl, whisk together extra virgin olive oil, pepper, salt, garlic powder, oregano and cayenne pepper to prepare the marination.

Step 2

Place the breasts in a deep plate and coat the marination evenly. It would be ideal if the breasts are completely submerged in marination. Cover with clingfilm and place in the fridge for 20-30 minutes.

Step 3

Once the breasts have been juicily marinated, remove from the fridge and heat up a pan. Cook the chicken breasts evenly and thoroughly on both sides.

Serve with rice and salad! Sprinkle some cheese on the chicken- it will automatically melt a bit as a great addition. Bon apetit!
